A salad can be a
great dinner option, but often you might have no ingredients on hand. Luckily,
this meal is relatively simple to put together and only takes about 15-20
minutes. This vegetarian meal uses a mix of spring onions, mint and sun-dried
tomatoes to give it that fresh summer flavor. It's served with boiled Broad
Beans tossed in butter and Ricotta Salata cheese, and then some extra virgin
olive oil and basil leaves.
Avocado and Lemon
Zest Spaghetti
The 'spaghetti' is
made from zucchini, squash or gluten-free pasta. The spaghetti is cooked in
salted boiling water then set aside to cool. Meanwhile, place the avocado flesh
and lemon juice into a blender to make a smoothie. Add in some extra finely
chopped herbs like basil, chives, or parsley for color if you have more time.
Once the spaghetti has cooled down a little bit, spread it out onto plates if
desired but serve it right away because the spaghetti will start to stick together
if left too long! Place the avocado and lemon pasta alongside some fresh greens
such as frisee salad or rocket leaves with a balsamic vinegar dressing.
Tuscan bean soup is a quick and easy meal that will only take you
about 20-30 minutes to prepare. You can do most of the preparation ahead of
time and heat it when you're ready to serve. To make this dish, start by
soaking 1 cup of dry white beans overnight in enough water to cover beans by 3
inches. After 8-10 hours, simmer the soaked beans with 2 cups fresh water until
they are tender, about 45-60 minutes. While the beans are cooking, chop up four
cloves garlic and three carrots and steam them with a pinch of salt until
tender (about 15 minutes). Add these vegetables plus 1/2 pound leftover cooked
ham or chopped turkey or chicken breast; then cook over low heat
Corn fritters with
Avocado Salsa is an easy dish to put together. You can make the salsa in
advance and keep it in the fridge for up to 4 days, or make it when you want to
eat the dish. The recipe includes corn kernels that you can either cook
yourself or use tinned corn quicker. Fry up the corn fritters (or patties)
until browned on both sides then let them drain on paper towel while you prepare
your guacamole by mixing avocados, cumin, salt and lemon juice until well
combined. Serve the avocado guacamole with warm corn breading alongside some
chopped onion rings and fresh tomato salsa.
